2360 Ajowan ( Carum copticum )
An important commercial spice crop in India where the pungent,
aromatic seeds are in great demand in curries, pickles,
confectionery and beverages. Used medicinally for sore throat,
bronchitis and cough. Potent antifungal against pathogenic
fungi. Grows like cumin or dill, Start in peat or paper pots in
April; do not disturb roots when transplanting. Ht. 30-100
cm/1-3 ft.
H802 Arugula/Roquette ( Eruca vesicaria sativa )
Another old time heirloom herb growing to 2' tall. The young
leaves have a horseradish flavor and are deeply toothed
resembling turnip greens. The scent and flavor are reminiscent
of peanuts. This is a cool weather crop that gets bitter in
midsummer heat. Make several plantings in early spring and
again in midsummer. Harvest by shearing off the entire plant at
ground level.

)
Annual Heirloom. 1' Tall. Lacy looking young foliage and
seedlings are used in salads, stuffing or as a garnish. Makes a
good substitute for watercress in spring and fall. Roots, seeds
and leaves are used as a spicy condiment. Plant seeds thickly
in spring and reseed biweekly for fresh greens. Discontinue
through hot summer weeks and resume seeding in late summer in
light shade. Harvest entire plant at 6-12" Grow sprouts indoors
through winter on blotter paper. Hardy and easy to
transplant.

)
A new type of green that is taking green lovers by storm. The
large leaves are more tasty and nutritious than any green
you've ever tried.
G040 Pickling Dill ( Anethum graveolens )
Dill is very easy to grow and is used to flavor pickles,
salads, soups and more. To harvest Dill, cut flowering stems
when in full bloom. Spread out to dry on trays. When dry, rub
off flowers and stems and discard the stems. Store the flowers
and stems in an airtight container until ready to use.
2265 Dill "SuperDukat" ( Anethum graveolens )
Maturity: 40-55 days to leaf harvest; 85-105 days to seed. High
essential oil content for potent flavor. The flower heads are
uniform in height and the plant is straight and clean for
easier harvesting. A week later to flower than Bouquet. Edible
flowers: break into florets and mix in cheese, omlets or soft
cheese. Use whole heads in pickles.

H816 Marjoram, Sweet/Knotted ( Origanum majorana
)
Heirloom, Annual 1' tall. A sweeter, less harsh flavor than
oregano with a hint of balsam. Fresh or dried leaves are used
to flavor eggs, vegetables, sausages, lamb, pork, bean soup,
stuffing, etc. An important seasoning in German sauces.

Hot, spicy seeds used in Indian dishes or crushed to make

)
Bright green, frilled, curled leaves add color and flavor to

grained roots with a delicate flavor. Keeps well.

HR490 Green Leaved Shiso (Perilla frutescens)
Cinnamon scented leaves with a ginger taste. Used in salads and
is a popular Japanese gourmet vegetable.
HR500 Red Leaved Shiso (Perilla frutescens)
Same as green leafed shiso, but with reddish foliage. Very much
used as a garnish.
HR510 Safflower ( Carthamus tinctorius )
Dried flowers are used as a substitute for saffron.
HR520 Sesame ( Sesamum indicum )
Sesame is a fun and easy to grow herb with beautiful bell shaped flowers. This variety has tan seeds and can be used for baking, salads, sauces and noodles. The leaves are also edible. It succeds in a wide range of soils. Do not overfertilize.
The seeds are ready to harvest in early fall when 1/3 of the pods have started to open. Cut the plants and lay on a tarp to finish maturing, the pods will open as they dry out. Direct seed after the last frost in the spring. They don't transplant well.
Sow 1/2"" deep in rows 1' apart, thin plants to stand 8"" apart in the row. It can also be grown as a house plant.

leaves add a hint of cucumber to soups, casseroles and
salads.
HR119 Lemon Catmint ( Nepeta mussini )
Bushy plant used for rock garden. Lovely blue flowers. Likes
hot, dry weather. Used medicinally.
HR123 Catnip ( Nepeta cataria )
Cats love this plant and it is used to flavor teas. Has
attractive heart shaped foliage.
HR127 Chives ( Allium schoenoprasum )
Used as a salad for its small leaves which are produced very
early in the spring and give a mild onion flavor to many
dishes. The more cuttings you take, the more it produces.
NB11 Windowsill Chives ( Allium schoenoprasum )
Zone 3-9. This variety has especially thick, dark green leaves and stands up well to pot culture and being indoors over the winter. It regrows quickly from a cutting and actually needs regular shearing to stay stocky and compact. Start outside in pots in the spring and move indoors in the fall for winter harvesting. Produces small lavender flowers and hollow stems that are edible, smelling and tasting mildly of onion. Use in soups, scrambled eggs, soft cheeses, mashed potatoes and salads. Can be used fresh, dried or frozen. Germinate @60-70°F in 2 weeks, keep in the dark. Hardy and easy to transplant.

Use leaves to add mild garlic flavor to salads, soups and stir
frys. Has soft white flowers.
HR134 Feverfew ( Matricaria capensis )
A native American herb with sprays of 1" single white daisy
like flowers. Yellow centers are flat. The flowers are said to
repel bees and a tea made from the plant is said to relieve
headaches.

Leaves are used for flavoring juices and teas. Juice used for
medicinal candies.

Similar to mint flavor, use small amount in salads and other
dishes.

Plants flower in first season. Use for bedding plants, borders
in containers or in rock gardens. Delightful lavender

Lemon scented foliage and blooms attracts bees and butterflies.
The oils of the plant have been used to dress wounds.
HT114 Lemon Grass, East Indian
Cymbopogon flexuosus
Source of lemongrass oil used to flavor teas, candies, chewing
gum, etc. A tropical annual that can be grown as an annual in
the US. Many uses, crushing a few leaves in your hands will
release lemony fragrance that repels mosquitoes. Essential oil
contains large amounts of citral and geraniol which are used in
flavorings and perfumes. Medicinal: Tea used to treat digestive
problems and fever. Anti-inflammatory. Lemon Grass is also a
beautiful addition to mixed containers and flower borders.

A very attractive plant for the garden. The seeds are used in
cakes and as a seasoning.
HR175 Oregano ( Origanum vulgare )
Flavorful herb used on fish and in tomato sauces and much more.
Much used in Italian cooking and salads.
H811 Oregano, True Greek ( Origanum heracleoticum
)
1-2' tall. Hardy to zone 5. This is the strongest flavored of
all the oregano varieties with a strong, earthy aroma. A rapid
spreader with white flowers. Used in Italian dishes, tomato
sauce, pizza, fish and salad dressing. Sow in spring, summer or
early fall. Hardy and easy to transplant.
HR180 Pennyroyal ( Mentha pulegium )
A strong but pleasantly scented plant used to repel insects and
protect linens. Makes a beautiful ground cover .

D7939 Peppermint ( Mentha x piperita )
A beautiful plant with purple flowers and purple tinged leaves.
Its fragrance is used in many different ways. The plant likes
moist areas.
Peppermint thrives best in full or partial sun, in a rich, drained loam that will retain water in summer. Not enough sun and the plant gets leggy. Not enough water or nutrients, and it can become susceptible to rust or mildew. Pests shouldn't be a problem.
During the growing season, keep cutting the mint to use it fresh or dry it (if you've got the space, freezing mint is one of the best ways we've seen to retain the herb's essential oils). Since peppermint is a natural hybrid between water mint and spearmint, it doesn't produce seeds, but is easily propagated by taking root or stem cuttings (which will produce roots quickly if placed in water), or by dividing the plants in the spring or autumn. Mint is a perennial that should come back easily year to year, although if your winters get really cold, a layer of mulch to protect the plant is advised.
Peppermint is used commercially to flavor a wide variety of products, from mouthwash to candies, ice creams to jellies. By itself or combined with other herbs to make a tea, it can't be beat, and adding peppermint oil to baths makes for a relaxing menthol soak.
Medicinally, peppermint has been used to alleviate a wide array of different conditions, including indigestion, sore throat, colds, headache, and cramps. By mildly anesthetizing the mucous membrane, it can prevent vomiting and help to quell nausea, and taken before eating it can increase bile flow, which helps to break down fats so your body can use them more effectively. It also may provide benefits for intestinal disorders such as irritable bowel syndrome.

HR215 Sweet Woodruff
Galium Oodratum
Zone 6-8. Sweet woodruff is a mat-forming perennial that is most often grown as a ground cover in shady areas. Plants typically grow 8-12" tall and feature fragrant, lance-shaped, dark green leaves in whorls of 6-8 along square stems. Small, fragrant, 4-petaled, white flowers appear in loose cymes in spring. Plants emit a strong odor of freshly mown hay when foliage is crushed or cut. Aromatic intensity of the foliage increases when dried, thus dried leaves are popularly used in sachets or potpourris. Plants have also been used commercially in perfumes. Leaves are sometimes used to flavor teas and cold fruit drinks. Leaves are also used to make May wine, a punch made from white wine flavored with woodruff, orange and pineapple. Woodruff comes from Old English meaning wood that unravels, in probable reference to the creeping rootstock of the plant. Formerly known as Asperula odorata.
