Rare root vegetable that is as easy to grow as carrots. Peel the roots after cooking when the skin slips off. Add to soup, stew and mashed potatoes. Grow at 65°F for 2-3 weeks. If germination is slow the soil should be deeply watered. Thought to repel Carrot Roof Fly.

The roots grow 8-10” long. They are white with a brown-blackish skin. The plants are thoroughly edible. Roots, young leaves, flower buds and flower petals are all edible.
