Flavor Profile

Growing Information

Sow seeds directly outdoors in early spring as soon as soil can be worked, or again in late summer for a fall crop. Plant seeds ½ inch deep and 1–2 inches apart in rows spaced 12–18 inches apart. Thin seedlings to 3–4 inches apart for full-sized roots. Keep soil evenly moist for smooth, tender beets.

Harvest & Storage

Harvest roots when they reach 2 to 3 inches across for best tenderness and flavor. Young greens may be clipped lightly as plants grow, but leave enough foliage to support root development. Store roots in the refrigerator after removing tops, leaving about 1 inch of stem attached. Mature beets also store well in cool, humid conditions.
